Spelt Anise Shortbread

Ingredients

  • 200 g soft butter
  • 75 g sugar
  • 2 tbsp vanilla sugar
  • 0.5 tsp ground anise
  • 1 tsp grated organic orange zest
  • 3 eggs
  • 0.5 tsp Baking powder
  • 300 g spelt flour
  • milk (as needed)

Instructions

    Cream the soft butter in a bowl. Add the sugar, vanilla sugar, anise, orange zest and eggs and continue to cream. Mix the baking powder into the flour and fold it into the egg mixture until a spreadable dough forms. If the dough is too stiff, add a little milk. Cover and chill for about 30 minutes.

    Preheat the oven to 180°C fan.

    Fill a piping bag with a star tip and pipe dollops onto a parchment-lined baking sheet. Chill again for another 30 minutes.

    Bake in the oven for about 12 minutes until golden brown and let cool.
