Ingredients
- 60 g American pistachios (unshelled)
- 25 g fine rolled oats
- 200 g dried dates (pitted)
- 100 g dark chocolate (70% cocoa)

50 g pistachios in a food processor and finely grind. Add oats and dates and blend until the dates are crushed and everything is well mixed. Shape 16 date-pistachio balls from the mixture, place on a plate and let rest in the freezer for 10 minutes.

Meanwhile break the chocolate into pieces and melt over a double boiler. Finely chop the remaining pistachios.

Dip each date-pistachio ball individually into the chocolate, sprinkle with pistachios and refrigerate for 30 minutes. For those who like the chocolate really cold and crisp, put the balls back in the freezer for another 10–15 minutes.
