Chocolate Mousse Dessert
Dessert with chocolate mousse, cherry compote and mascarpone cream: layer by layer a delight – Spoonsparrow shows how to make it!
Ingredients
- 100 g dark chocolate (at least 70 % cocoa content)
- 2 Eggs
- 1 pinch salt
- 1 tbsp sugar
- 75 g whipping cream
- 185 g blackcurrants (small jar; drained weight)
- 80 ml dry red wine
- 1 stick cinnamon
- 0.5 tsp cornstarch
- 200 g mascarpone
- 0.25 tsp vanilla powder
- 2 tsp sugar
- 75 g whipping cream
- Chocolate shavings (for garnish)
- 2 tbsp cocoa powder (to dust)

Chop the chocolate and melt it over a hot, non-boiling water bath, then let it cool. Separate the eggs; beat the egg whites with 1 pinch of salt until stiff peaks form. Whisk the yolks with sugar over a hot, non-boiling water bath until very frothy.

Fold in the melted chocolate, stir and remove from heat. Beat the cream to stiff peaks and fold into the mixture. Fold in the meringue as well. Divide the batter among 4 dessert cups and chill in the refrigerator until set (about 3–4 hours).

For the cherry compote, drain the cherries well and reserve the juice. In a pot, bring 50 ml red wine and 1 stick cinnamon to a boil, then thicken with the remaining wine mixed with cornstarch. Add the cherries, let it come to a quick boil, then remove from heat. Remove the cinnamon stick and let the compote cool.

For the mascarpone cream, beat the cream to stiff peaks. Mix mascarpone with vanilla and sugar, then fold in the whipped cream. Fill a piping bag fitted with a star tip with the mixture.

Spread 2 tbsp of cherry compote over the chocolate mousse, add a little mascarpone cream on top, and again spread 2 tbsp of compote. Finish with more mascarpone cream, garnish with chocolate shavings, and dust with cocoa powder. Serve the chocolate mousse dessert.
