Ingredients
- 150 g butter
- 125 g Brown sugar
- 1 egg
- 2 tsp spekulatius spice blend
- 1 pinch salt
- 60 g ground almonds
- 300 g spelt flour type 1050 (+ 2 tbsp for working)
- 1 tsp Baking powder

Beat butter, sugar and egg until frothy for about 10 minutes. Add spekulatius spice blend, salt and ground almonds and mix well. Combine flour and baking powder and knead into the dough. Wrap dough in cling film and refrigerate for about 1 hour.

Roll out dough on a floured surface to about 4 mm thickness. Cut rectangles to fit the spekulatius mold, place onto the floured mold and press with a rolling pin. Line a baking sheet with parchment paper and drop dough pieces directly onto the sheet.
