Ingredients

  • 300 g puff pastry
  • 1 egg yolk
  • 1 tsp powdered sugar
  • 2 Tbsp whipping cream
  • 400 g dark chocolate couverture
  • 200 ml whipping cream
  • 50 g butter
  • powdered sugar (for dusting)

    Preheat the oven to 200°C fan.

    Spread the puff pastry and cut into 15 squares (about 8x8 cm) using a rolling pin grid. Place on a parchment-lined baking tray. Beat the egg yolk with powdered sugar and cream until smooth, brush over the pastry, and bake for about 20 minutes until golden brown. Remove, cool, and slice each square horizontally once.

    For the filling, chop the chocolate couverture into a bowl. Heat the whipping cream, pour it over the chocolate, and stir until melted. Add butter in small pieces and mix well. Let the mixture cool until it starts to thicken. Stir vigorously again, then fill a piping bag with a star tip. Pipe the chocolate cream into the pastry squares, reassemble, dust with powdered sugar, and serve.
