Powdered Sugar Dusted Doughnuts

- Hefe
- 175 ml milk (3.5%)
- 25 g butter
- 250 g flour
- 30 g sugar
- 1 pinch salt
- 1 egg yolk
- 1 kg white cooking fat (for frying)
- granulated sugar (for coating)
- 150 g jam (choice)
- powdered sugar (for dusting)

Dissolve yeast in lukewarm milk. Melt butter and let cool. Add flour, sugar, salt, and egg yolk to a bowl. Add the yeast-milk mixture and melted butter. Knead with hand mixer attachments until smooth. Cover and let rise at room temperature for about 30 minutes.

Shape dough into approximately ten balls. Place on a parchment-lined baking sheet and let rise again for 30 minutes. Heat cooking fat in a tall pot to 180°C. Fry the doughnuts one by one in the hot fat until golden brown. Remove with a slotted spoon, drain, and coat in granulated sugar. Strain jam through a sieve and fill a piping bag with a small tip. Puncture each doughnut and pipe a small amount of jam inside. Dust with powdered sugar before serving.
