Spaghetti with Shrimp and Tomatoes

Ingredients

  • 500 g spaghetti
  • 12 large shrimp
  • 400 g cherry tomatoes
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 1 splash white wine
  • 200 ml fish stock
  • Sea salt
  • Cayenne pepper
  • basil (for garnish)

Instructions

    Cook spaghetti in plenty of salted water according to package instructions until al dente.

    Peel shrimp except for the tail segment, devein, rinse and pat dry.

    Simmer shells with fish stock until reduced by half. Strain through a sieve and reserve the stock.

    Peel garlic, finely chop and grate lightly with a knife edge over a pinch of salt.

    Wash tomatoes and halve them.

    Sauté shrimp in hot oil briefly until golden brown on all sides, add garlic and tomatoes. Deglaze with white wine and pour in stock. Simmer gently for about 2 minutes. Season well with salt and cayenne pepper, then fold in the spaghetti. Toss through and serve on plates garnished with basil.
