Pasta with Shrimp

Ingredients
- 400 g green asparagus
- 3 tomatoes
- 400 g spaghetti
- 2 shallots
- 2 Garlic cloves
- 4 tbsp olive oil
- 400 g pre-cooked shrimp
- fresh thyme leaves
- 1 tsp sugar
- Salt
- Cayenne pepper
- 1 tbsp balsamic vinegar
Instructions

Clean the asparagus, cut the stems diagonally into pieces. Briefly blanch the tomatoes for a few seconds, shock in cold water, peel, quarter, deseed and dice. Peel and finely chop the shallots and garlic.

Cook spaghetti in salted water until al dente; about 5 minutes before the end of cooking, add the asparagus pieces and continue cooking together. Drain both into a colander, rinse with cold water and let them drain briefly.

Heat olive oil in a pan, sauté the shallot and garlic while stirring for a short time, then add the shrimp and cook for 3-4 minutes. Add the asparagus, spaghetti and tomatoes to the pan, warm everything through, season with fresh thyme leaves, a pinch of sugar, some salt, cayenne pepper and balsamic vinegar.
