Egg Noodle Gratin

Ingredients
- 500 g whole wheat lasagna sheets (pre-cooked from the package)
- 1 l milk
- 4 tbsp butter
- 4 tbsp flour
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 4 tbsp parmesan cheese (freshly grated)
- 120 g Parma ham (thinly sliced)
- 6 Eggs
- a handful fresh basil

Preheat the oven to 200°C.

Melt butter in a pot over medium heat. Sprinkle flour and cook until lightly browned. Gradually stir in milk, bringing to a boil. Cook for about 1 minute, then remove from heat and whisk in parmesan. Season with salt, pepper, and nutmeg.

Brush the bottom of a baking dish with 3 tbsp of sauce and lay lasagna sheets over it. Brush with béchamel sauce and slide 2-3 raw eggs on top. Cover these with hot sauce. Place 1-2 slices of Parma ham on top. Continue layering in the same order until all ingredients are used, being careful not to press down the noodles so the yolks don’t run.

Finish with béchamel sauce. Distribute remaining Parma ham over the top.

Place in the preheated oven and bake for about 30 minutes. Let cool slightly, then serve sprinkled with plenty of basil leaves.
