Ingredients

  • 2 chicken breast fillets (≈140 g)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp plant oil
  • 400 g spaghetti
  • 4 tomatoes
  • 150 g chorizo
  • 1 Garlic clove
  • a splash red wine
  • freshly grated Parmesan
  • Basil

Instructions

    Rinse the chicken and pat dry. Season with salt and pepper, then sear in a hot pan with oil for 3-4 minutes on each side until golden brown. Reduce heat to medium-low and cook for an additional 5-6 minutes until done.

    Cook the pasta in salted water until al dente.

    Wash the tomatoes, quarter them, remove seeds, and cut into pieces. Slice the chorizo thinly. Peel and finely chop the garlic. In a hot pan, sauté the chorizo slices and garlic for 1-2 minutes. Deglaze with red wine and add the tomatoes. Let simmer gently for about 5 minutes until slightly thickened. Season with salt and pepper.

    Slice the cooked chicken into strips and combine with drained pasta in the sauce. Plate and garnish with grated parmesan and basil.
