Ingredients

  • 400 g spaghetti
  • 500 g Green Asparagus
  • 300 g shrimp
  • 1 tbsp Olive Oil
  • 4 tbsp parsley
  • 1 untreated lemon (zest included)
  • 3 tbsp Lemon juice
  • 400 ml Vegetable broth
  • 1 small potato
  • Salt

Instructions

    Wash and trim the asparagus, split lengthwise, cut into bite-sized pieces.

    Cook pasta with asparagus in boiling salted water for about 10-15 minutes until al dente.

    Rinse shrimp, pat dry, sauté in oil for 2 minutes on all sides. Add parsley, lemon zest, and juice; deglaze with broth. Grate the peeled potato into the sauce, bring to a boil once more.

    Drain the pasta‑asparagus mixture onto plates and pour the shrimp sauce over it.
