Ingredients

  • 400 g penne
  • 1 kg tomatoes
  • 2 cloves garlic
  • 3 onions
  • 50 ml olive oil
  • 0.5 bunch Basil
  • 1 tsp Oregano
  • 2 Bay leaves
  • 2 tbsp sugar
  • salt (pepper)
  • 80 g Parmesan (chunk)

Instructions

    For the tomato sauce peel and finely chop the onions and garlic, then sauté them in olive oil. Wash the tomatoes, quarter them, and add to the onions with oregano and bay leaves. Simmer on low heat for 1 hour; if needed, add a splash of water.

    Pass the sauce through a fine-mesh sieve, bring it back to a boil, then season with salt, pepper and sugar. Cook the pasta according to package instructions, drain, plate, and ladle tomato sauce over it. Tear basil leaves from the stems and sprinkle grated Parmesan on top.
