Ingredients

  • 400 g spaghetti
  • Salt
  • 2 Garlic cloves
  • 3 tbsp olive oil
  • 150 ml Vegetable broth
  • 2 tbsp ground almonds
  • 75 g crème fraîche
  • 1 handful fresh herbs (e.g., sage, parsley, chives, tarragon, savory, sorrel)
  • 3 tbsp freshly grated Parmesan
  • pepper (ground)

Instructions

    Cook the spaghetti in salted water until al dente. Peel and finely chop the garlic. Briefly sauté it in hot oil, then deglaze with vegetable broth. Let simmer briefly, then stir in the almonds and crème fraîche.

    Wash the herbs, shake dry, pluck, and roughly chop. Add to the sauce and puree everything with a stick blender until smooth. Stir in Parmesan and season with salt and pepper. Toss the drained pasta with the sauce and serve.
