Spaghetti with Ground Meat Sauce

Ingredients
- 500 g spaghetti
- 1 can peeled, chunked tomatoes
- 1 onion
- 2 Garlic cloves
- 1 Carrot
- 300 g ground meat
- 100 g pancetta (or bacon)
- olive oil
- Salt
- Pepper (freshly ground)
- 100 ml red wine
- 150 g Mushrooms
- 2 tbsp chopped parsley

Peel and finely chop the onion. Peel and dice the carrot. Peel and mince the garlic. Dice the pancetta into small cubes. Heat 4 tbsp oil and sauté the onion until translucent. Add carrots, celery, and pancetta and cook briefly. Then add the ground meat and garlic; stir over medium heat until the meat is nearly cooked. Deglaze with wine and add the chunked tomatoes. Cover and simmer on medium for 40-50 minutes, adding water if the sauce reduces too much. Stir occasionally. Meanwhile, clean and quarter the mushrooms.

Season the sauce with salt and pepper, then add the mushrooms. Keep covered for about 10 more minutes to let flavors meld.

Cook the pasta in plenty of salted water until al dente. Drain and serve immediately with the hot sauce, garnished with parsley.
