Green Noodles with Egg

Green noodles with egg are very easy to prepare and bring color to the plate.

Ingredients

  • 200 g spinach leaves
  • 6 egg yolks
  • 150 g wheat flour type 1050
  • 1 tbsp Olive Oil
  • Salt
  • 15 g soft butter (1 tbsp)
  • nutmeg

Instructions

    Rinse the spinach leaves, drain well and finely puree with 2–3 tbsp water. Strain through a fine cloth into a pot. Squeeze out the liquid and gently heat on low for about 3–4 minutes. Skim off the browned green from the surface with a tea strainer.

    Separate the eggs and use the whites elsewhere. Sprinkle flour onto a work surface and form a well in the center. Add the yolks and press the spinach through the sieve into the well. Add oil, butter, salt and freshly grated nutmeg. Stir with a fork into a thick batter, then knead by hand into a firm, smooth, elastic dough, incorporating the flour.

    Shape the dough into a ball, dust with flour and cover or place in a plastic bag to rest for about 1 hour before proceeding as desired.
