Ingredients

  • 800 g lamb shoulder meat (pre-cut)
  • 2 red bell peppers
  • 2 Garlic cloves
  • 1 lemon (juice)
  • 2 tbsp freshly chopped herbs (thyme and oregano)
  • 100 ml olive oil
  • Sea salt
  • black pepper (ground)

Instructions

    Cut the trimmed, dry-marbled meat into roughly 2 cm cubes. Wash, halve, de-seed the bell peppers and cut into bite-sized pieces. Alternate threading onto skewers and arrange side by side in a shallow dish or on a baking sheet.

    Peel the garlic and slice thinly. Mix with lemon juice, herbs, and oil. Drizzle over the skewers, cover, and marinate in the refrigerator for at least 2 hours.

    Drain the skewers and grill them hot for about 15 minutes, turning frequently and brushing with more marinade. Finish seasoning with sea salt and pepper, remove from grill, and serve.
