- 1 lamb rack (with rib bones, about 800 g)
- Salt
- pepper (ground)
- 2 tbsp plant oil
- 4 sprigs thyme
- 5 tbsp Honey

Preheat the oven to 160°C (320°F) with upper and lower heat. Wash the lamb rack, pat dry, and carefully trim the rib bones with a knife. Season the meat generously with salt and pepper, then brown it on all sides in a hot pot with oil.

Wash the thyme, shake off excess water, pluck the leaves, and finely chop them. Warm the honey in a saucepan, mix in the thyme, and brush the lamb rack with this mixture. Place in the preheated oven and cook for 20–25 minutes, brushing again with the thyme‑honey sauce every few minutes. Remove, slice into chops, and serve.
