Soba noodles with Nori

Ingredients

  • 2 roasted nori sheets
  • peanut oil (for frying)
  • 500 g soba noodles
  • 4 tsp wasabi paste
  • 250 ml soy sauce
  • 2 cm ginger
  • 1 handful Thai basil
  • 2 tbsp sesame oil
  • 2 tbsp rice wine

Instructions

    Cut the nori sheets into strips about 1 cm wide. Fry them in a hot wok or pan, letting them float in the hot oil until crisp. Drain on kitchen paper.

    Cook the noodles according to package instructions.

    For dipping sauces, place a small amount of wasabi in individual bowls and pour 3–4 tbsp soy sauce over it. Peel the ginger and slice thinly. Rinse the Thai basil, shake dry, pluck the leaves and roughly chop them. Sprinkle over the sauces.

    Whisk together sesame oil, rice wine and 2–3 tbsp soy sauce, then toss with the drained noodles. Divide into bowls and garnish with nori strips. Serve the dipping sauces on the side.
