Ingredients

  • 250 g Basmati rice
  • Salt
  • 2 carrots
  • 1 Zucchini
  • 8 small spring onions
  • 300 g beef (e.g., sirloin)
  • 1 Garlic clove
  • 2 tbsp fish sauce
  • 5 tbsp peanut oil
  • 200 g shiitake mushrooms
  • 1 tbsp soy sauce
  • 4 eggs

Instructions

    Cook the rice in double the amount of salted water for about 20 minutes.

    Peel and cut the carrots into fine sticks. Wash, trim and finely stick the zucchini. Wash and trim the spring onions. Rinse the beef, pat dry and slice into strips. Peel and finely chop the garlic. Mix the fish sauce with the beef and stir-fry in a wok with 2 tbsp hot oil for about 1 minute. Clean and slice the mushrooms. Remove the beef from the wok and stir-fry the mushrooms in 1 tbsp oil for 1-2 minutes until golden brown. Season with soy sauce and remove from the wok. In the remaining oil, fry the eggs into sunny-side-up eggs in a pan.
