Snowflake Cookies

Ingredients
- 4 tbsp powdered sugar
- Lemon juice
- powdered sugar (for working)
- 1 kg white fondant
- 1 egg
- a pinch salt
- 100 g flour
- 100 g cornstarch
- flour (for working)

Combine the nuts with diced butter, sugar, vanilla sugar, egg, salt, flour and starch; rub into crumbs with hands. Knead into a smooth dough, wrap in cling film, and chill for about 30 minutes.

Preheat the oven to 180 °C fan‑forced. Line a baking tray with parchment paper.

Roll out the dough on a floured surface to about 5 mm thickness and cut out various sizes of flakes (largest around 8 cm diameter). Place on the tray and bake for 10–15 minutes. Remove from the tray and cool on a wire rack.

For decoration, whisk powdered sugar with lemon juice into a thick glaze. Roll fondant onto a lightly dusted surface to about 5 mm thickness. Cut out flakes of equal size using the cookie cutter used earlier. Lightly brush the cookies with some glaze and press the fondant onto them. Let dry.
