Ingredients
- 600 g snap peas
- 2 Tomatoes
- 80 g parmesan cheese (chunks)
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp coarse Dijon mustard
- Salt
- Pepper (freshly ground)
- 2 tbsp chives
Instructions

Wash snap peas, trim and blanch in boiling salted water for about 2-3 minutes. Shock in ice water, drain and distribute on four plates or bowls.

Wash tomatoes, dice and place over snap peas. Grate parmesan over each, season with salt and pepper. Mix mustard with oil and vinegar and drizzle over the salad. Sprinkle chives and serve.
