Apple Celery Salad

A fresh apple celery salad featuring citrus zest, creamy sauce and sweet apricots for a bright, crunchy bite. Spoonsparrow.

Ingredients

  • 2 tsp grated orange zest
  • 120 ml orange juice (from 2 oranges)
  • 150 g crème fraîche
  • Salt
  • 400 g bulb celery
  • 1 apple
  • 2 tbsp sunflower seeds (or other)
  • 2 dried apricots
  • 2 tsp pink peppercorns

Instructions

    Whisk together orange juice, zest, crème fraîche and a pinch of salt.

    Peel, wash and cut the celery into thin julienne strips or grate coarsely. Immediately fold the celery into the dressing.

    Wash the apple, quarter it, remove core and slice into strips, then add to the salad immediately.

    Rinse sprouts briefly and drain. Slice apricots thinly, combine with pink peppercorns and sprouts, mix in, and serve with whole grain rolls.
