Zucchini Salad with Grated Parmesan and Pine Nuts

Ingredients

  • 4 thin zucchinis
  • 1 small onion
  • 0.5 garlic clove
  • 3 tbsp yogurt
  • 2 tbsp olive oil
  • 2 tbsp white wine vinegar
  • Salt
  • Pepper
  • 1 tsp chopped parsley
  • parmesan (grated, to taste)
  • 50 g toasted pine nuts

Instructions

    Wash the zucchini and shave them lengthwise into very thin slices; lightly salt and set aside.

    Peel the onion and garlic and finely chop both. Mix with olive oil.

    Whisk the yogurt with vinegar until smooth, then add the onion-garlic-oil mixture and season with salt and pepper.

    Drain the zucchini, combine with parsley and the yogurt sauce, and spread on plates.

    Sprinkle with parmesan and pine nuts before serving; serve with white bread.
