Pasta with Vegetables

Ingredients
- 400 g tagliolini
- 1 Carrot
- 1 red bell pepper
- 0.5 leek (white and light green)
- 0.25 Cucumber
- 50 g almonds (roughly chopped)
- 200 g goat cream cheese
- 200 g canned baby corn
- 4 tbsp olive oil
- lemon(s) (including juice)
- 2 tbsp white wine vinegar
- a pinch of sugar
- Salt
Instructions

Cook Tagliolini in boiling salted water according to package instructions until al dente. Drain, rinse with cold water and set aside.

Peel the carrot and cut into sticks. Wash the bell pepper, halve it, remove seeds and slice into thin strips. Clean the leek, trim ends and cut into 6 cm long thin strips. Slice the cucumber lengthwise, remove seeds and cut into fine strips. Combine all vegetables in a bowl with canned corn, olive oil, lemon juice and vinegar.

Crumble goat cream cheese into the mixture and season with salt and sugar to taste. Let rest for at least 30 minutes to allow flavors to meld. Sprinkle almonds on top before serving.
