Ingredients

  • 150 g sultanas
  • 150 g currants
  • 100 g dried plums
  • 40 ml rum
  • 1 apple
  • 50 g lemon zest
  • 50 g orange zest
  • 60 g Butter
  • 50 g sugar
  • 0.25 tsp clove powder
  • 0.5 tsp cinnamon
  • 3 eggs
  • 30 g breadcrumbs
  • 125 g flour
  • 75 g ground hazelnuts

Instructions

    Preheat the oven to 150°C with fan and top heat.

    Rinse the sultanas and currants, drain them in a sieve. Finely chop the dried plums, mix with the sultanas, currants and rum. Peel the apple, quarter it, remove the core and grate finely. Add the grated lemon zest and orange zest to the rum fruit mixture. Cream the soft butter with sugar and spices. Beat the eggs until a nice froth forms. Fold in the breadcrumbs, flour and hazelnuts. Combine the batter with the fruit mixture and stir into a dough. Fill 12 small greased and breadcrumb‑lined molds (e.g., a muffin tin) and cover with foil. Place on a rack in a hot water bath for even cooking and bake for about 45 minutes.

    Remove from oven, let cool, release from molds and dust with powdered sugar before serving.
