Skewered Ground Meatballs with Salad

Ingredients
- 1 cucumber
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 200 g Cherry tomatoes
- 50 g green olives (pitted)
- 4 tbsp olive oil
- 3 tbsp Lemon juice
- oregano (for garnish)
- 2 shallots
- 500 g ground beef
- 1 tbsp finely chopped mint
- 1 egg yolk
- 1 tsp grated lemon zest
- 2 tbsp freshly grated white bread
- 1 tsp Pul Biber (dry Turkish paprika flakes, mild or hot; Turkish grocery store)
- Salt
- Pepper (freshly ground)
- 3 tbsp olive oil

Peel and finely chop the shallots. Combine the ground beef, shallots, mint, egg yolk, lemon zest, grated bread crumbs, Pul Biber, salt, and pepper into a meat mixture.

Shape about 20 small balls, skewer them on wooden sticks, and fry in hot oil for 4–5 minutes on all sides (or grill them and brush with oil).

For the salad, wash the cucumber, trim the ends, quarter lengthwise and cut into pieces. Wash the bell peppers, halve them, deseed, and slice into strips. Wash the tomatoes, clean and slice into wedges. Combine everything with the olives and spread onto bowls. Drizzle with olive oil and lemon juice, arrange the skewers on top, and sprinkle with oregano leaves before serving.
