Chicken Breast with Apple

Ingredients
- 4 chicken breast fillets about 140 g each (with skin)
- 50 g butter
- Salt
- Pepper (freshly ground)
- 2 Apples
- 8 shallots
- 1 tbsp honey
- 2 tbsp lemon juice
- 40 ml Calvados
- 120 ml poultry stock
- parsley (for garnish)

Preheat the oven to 140°C with fan and top heat.

Rinse the chicken and pat dry. Place skin side up on a baking tray. Melt about 30 g butter in a small pot, season with salt and pepper, brush the chicken with it and bake for about 20 minutes, brushing with butter every few minutes.

Meanwhile wash the apples, quarter them, remove cores and cut quarters into strips. Peel the shallots and sauté with the remaining butter until lightly golden. Drizzle honey and lemon juice, deglaze with Calvados and stock, simmer gently for a few minutes, season with salt and pepper.

Halve the chicken breasts, plate them, spoon apples and sauce over, garnish with parsley and serve.
