Chicken with Corn, Papaya and Zucchini

Ingredients
- 1 small unripe papaya
- 0.5 bunch spring onions
- 2 zucchinis
- 500 g chicken breast fillet
- 3 tbsp oil
- 400 ml unsweetened coconut milk
- 2 cans corn kernels (ca. 280 g)
- Salt
- pepper (ground)
- 2 tbsp finely chopped coriander leaves
- coriander leaves for garnish
Instructions

Wash, trim and finely chop the spring onions.

Wash, trim and cut the zucchinis into small pieces.

Peel and mince the garlic.

Halve the papaya, remove seeds, separate flesh and dice it.

Season the chicken with salt and pepper and fry in 1 tbsp hot oil for about 5 minutes on each side, then set aside.

Sauté the vegetables (except corn) in 2 tbsp hot oil in a pot, pour in coconut milk, bring to a boil, cover and simmer for about 15 minutes. Dice the cooked chicken, stir in drained corn and finely chopped coriander, heat through, season with salt and pepper, taste and adjust. Serve garnished with coriander leaves. Pair with rice.
