Ingredients
- 2 tbsp elderflower syrup
- 1 Orange (juice)
- 1 tsp mustard powder
- 1 tbsp Apple cider vinegar
- 80 ml Rapeseed oil
- Salt
- Pepper
- 300 g mixed leaf lettuce (e.g., red oakleaf, green oakleaf, arugula, sorrel)
- 200 g shrimp (pre-cooked and peeled)
- elderflower blossoms (for garnish)
Instructions

Whisk the syrup with orange juice, mustard powder, and vinegar. While stirring, pour in oil until a creamy sauce forms. Season with salt and pepper.

Wash, trim, dry, and tear the lettuce into small pieces. Arrange on deep plates with shrimp and drizzle dressing over the top.

Serve garnished with elderflower blossoms.
