Ingredients

  • 300 g green asparagus
  • Salt
  • 4 tbsp apple cider vinegar
  • 1 tbsp Lemon Juice
  • a pinch of sugar
  • 2 tbsp grape seed oil
  • Pepper
  • 2 handfuls mixed leaf lettuce (e.g., arugula and watercress)
  • 200 g mozzarella (20% fat)
  • 1 Mango
  • 120 g prosciutto

Instructions

    Peel the lower third of the asparagus and cook the spears in salted water for about 10 minutes. Then shock, drain, and cut into 3–4 cm pieces. Wash the cucumber, trim the ends, and slice or shave into rounds.

    Whisk together the vinegar, lemon juice, sugar, and oil; season with salt and pepper. Toss the asparagus and cucumber slices in the dressing and let rest.

    Rinse the leaf lettuces, dry thoroughly, and tear into bite‑sized pieces if desired. Slice the mozzarella. Peel the mango, remove the flesh from the pit, and cut into thin strips.

    Combine the lettuce with the marinated vegetables, taste again, then arrange on plates with mozzarella, mango, and ham slices. Lightly pepper and serve.
