Ingredients
- 500 ml vegetable broth
- 250 g emmer
- 300 g cherry tomatoes
- 1 Shallot
- 1 Garlic clove
- 3 tbsp olive oil
- 3 sprigs parsley
- 3 sprigs Basil
- Salt
- Pepper (freshly ground)
- Lemon juice

Bring the vegetable broth to a boil in a pot, add the emmer and simmer gently for about 40 minutes, stirring occasionally until it has absorbed the liquid.

Wash and halve the tomatoes. Peel and finely chop the shallot and garlic, then sauté them in a hot pan with oil until translucent. Rinse the herbs, shake dry, roughly chop the leaves and add them to the tomato mixture. Sauté briefly, fold in the cooked emmer, and season with salt, pepper and a splash of lemon juice.
