Mango and Shrimp Salad

Ingredients
- 8 shrimp (prepped, with tail end)
- 5 tbsp olive oil
- 1 Garlic clove
- Juice of 1 lime
- 1 frisée lettuce
- 1 small radicchio
- 2 Spring Onions
- 1 Mango
- 2 tbsp white wine vinegar
- Salt
- Pepper (freshly ground)
- 3 tbsp heavy cream
- 2 tsp maple syrup

Instructions

Whisk 2 tbsp oil with finely chopped garlic and lime juice, toss shrimp in the mixture and let marinate for about 30 minutes.

Separate salad leaves, wash, trim, rinse, dry, and tear slightly. Wash spring onions, trim, and slice diagonally into ~1 cm thick strips.

Peel mango and cut flesh into wedges around the stone.

Whisk vinegar, salt, pepper, maple syrup, cream, and 2 tbsp oil together; taste and adjust seasoning.

Heat 1 tbsp oil in a pan, sear shrimp for about 2 minutes per side until golden.

Combine salad ingredients with dressing in a bowl, top with shrimp, garnish with lime wedges, and serve immediately.
