Mango, Ham and Mozzarella Salad

Ingredients

  • 1 chili pepper
  • 1 cm ginger
  • 3 tbsp olive oil
  • 0.5 handful coriander leaves
  • 1 tsp soy sauce
  • 2 tbsp Apple cider vinegar
  • 0.5 tsp sweet paprika powder
  • 1 pinch Curry powder
  • 0.5 tsp Sugar
  • Salt
  • Pepper
  • 3 mangoes
  • 1 handful Arugula
  • 250 g mini mozzarella balls
  • 120 g prosciutto (thin slices e.g., Parma)

Instructions

    Halve the chili pepper lengthwise with gloves, remove seeds and white membranes, cut flesh into large pieces. Peel and roughly cube the ginger. Blend both with olive oil until smooth. Wash coriander, dry and finely chop. Stir in soy sauce, apple cider vinegar, paprika powder, curry powder and sugar. Season with salt and pepper.

    Peel mangoes, cut flesh from core and dice large. Wash arugula and spin dry. Drain mozzarella balls and let them drip well. Arrange prosciutto on four plates. Top with mango cubes, mozzarella, then spread arugula over it. Drizzle dressing and serve.
