Shrimp Omelette

Ingredients
- 1 Spring onion
- 1 tbsp Sunflower oil
- 0.5 red bell pepper
- 3 eggs
- Salt
- Pepper
- 150 g shrimp (ready-to-eat; cooked)
- 4 lettuce leaves
Instructions

Clean and wash the spring onion, finely dice the white part; slice the green into rings and set aside.

Heat 1 tsp oil in a pan. Sauté the diced spring onion over medium heat until translucent. Meanwhile, wash, trim, and cube half of the bell pepper.

Whisk the eggs with 1 tbsp water, salt, and pepper, then stir in the sautéed onions.

Add the remaining oil to the pan. Pour in the egg mixture, sprinkle with bell pepper cubes and shrimp, cover, and simmer over low heat for about 10 minutes until set.

In the meantime, wash the lettuce leaves, pat dry, and arrange on two plates.

Sprinkle the omelette with the leftover spring onion, season with salt and pepper, and serve on the plates.
