Moroccan Pancakes

Ingredients
- 300 g flour
- 5 g salt
- 0.5 tsp dry yeast
- vegetable oil (for working and frying)

Mix the flour with the salt and place in a bowl. Dissolve the yeast in about 350 ml lukewarm water. Add to the flour mixture and knead into a smooth, pliable dough that releases from the bowl edges. If needed add more flour or water. Cover and let rest for about 30 minutes until the dough rises noticeably.

Remove the dough and divide into six equal portions. Lightly oil your hands and flatten each ball on an oiled surface into a square of roughly 20x20 cm. Fold the edges toward the center and roll tightly into a strip. Stand vertically, then press thin again to form a circle about 20 cm in diameter. Repeat for all dough balls to create flatbreads.

Heat a skillet with a little oil over high heat and fry each pancake on both sides until light brown. Serve immediately.
