Ingredients

  • 400 g shrimp (pre-cooked peeled and deveined)
  • 400 g shiitake mushrooms
  • 2 onions
  • 2 Garlic cloves
  • 2 tbsp plant oil
  • 1 tbsp red curry paste (15 g)
  • Salt
  • Pepper
  • 0.5 tsp sambal oelek
  • 800 ml hot vegetable broth
  • 200 ml coconut milk
  • 1 handful herbs (e.g., coriander, Thai basil, mint)
  • 1 tbsp cornstarch (15 g)
  • 1 organic lime (zest and juice)

Instructions

    Rinse the shrimp and drain. Clean the shiitake mushrooms, remove tough stems, and slice the caps into thin strips. Peel and finely dice the onions and garlic.

    Heat oil in a pot over medium heat. Sauté onions and garlic for 3 minutes. Add mushrooms and cook for 2 more minutes. Stir in curry paste and simmer for 1–2 minutes.
