Baked Noodle Squares with Bacon

Ingredients
- 300 g flour
- flour (for rolling)
- 3 eggs
- Salt
- Pepper
- 200 g diced ham bacon
- 1 onion
- butter
- 1 tbsp oil
- 200 g whipping cream
- nutmeg
- 1 tsp parsley
- 1 tsp cumin

Sift the flour onto a work surface, form a mound with a hollow. Crack the eggs into the hollow and season with a pinch of salt. Quickly knead into a smooth dough. Knead vigorously for about 15 minutes until silky and shiny. Cover in cling film and rest at least 30 minutes.

Afterwards roll the dough thinly on a floured surface and let dry for 10 minutes.

Peel and chop the onions. Heat some butter in a pan and crisp the bacon, then add the onions and sauté until translucent. Let cool.

Cut the dough into squares. Then cook the squares in boiling water with a bit of salt and oil for 6 minutes until al dente. Drain over a sieve and let drain well.

Preheat the oven to 200°C (400°F).

Mix the squares, ham bacon, and onion cubes. Season with salt, pepper, and nutmeg. Place everything in a baking dish, pour whipping cream over it, and top with butter flakes. Bake for about 15–20 minutes until golden.

Sprinkle cumin and parsley before serving.
