Ingredients
- 1 onion
- 2 tsp freshly chopped ginger
- 2 Garlic cloves
- 300 g zucchini
- 300 g pumpkin flesh
- 2 tbsp oil
- 400 ml unsweetened canned coconut milk
- 1.5 tbsp green curry paste
- juice of 1 lemon
- Salt
- pepper (ground)
- 200 g cooked peeled shrimp
- basil for garnish
Instructions

Peel the onion and cut into strips. Peel and mince the garlic. Wash, trim the zucchini, and cut it with the pumpkin into small pieces.

Sauté the onions, ginger, garlic, zucchini, and pumpkin in oil over high heat for 4-5 minutes. Stir in coconut milk, curry paste, and lemon juice; season with salt and pepper and simmer uncovered over medium heat for about 3 minutes. Warm the shrimp in the sauce, then serve in bowls garnished with basil.
