Ingredients

  • 250 g butter
  • 150 g sugar
  • 250 g flour
  • 125 g rice flour

Instructions

    Beat the butter with the sugar in a bowl until fluffy. Add sifted flour and rice flour and knead into a smooth dough. Shape the dough into a ball, wrap it in cling film, and refrigerate for 30 minutes.

    Preheat the oven to 180°C (fan).

    Roll out the dough on a floured surface to a thickness of 0.4 cm and cut into rectangles about 2x3 cm. Use a fork to create a hole pattern along the edges of each rectangle and place them on a baking tray lined with parchment paper.

    Bake in the preheated oven for 10-12 minutes until light yellow. Remove, lift from the tray, and cool on a wire rack.
