Millionaire Shortbread

- 350 g soft butter
- 100 g sugar
- 275 g flour
- 400 g sweetened condensed milk
- 40 g liquid honey
- 250 g dark couverture chocolate

Preheat the oven to 160°C (320°F) fan.

Cream 225 g of butter with the sugar, sift in the flour and knead into a smooth dough. Transfer to a baking tin lined with parchment paper measuring about 21x21 cm, press evenly onto the base and bake in the preheated oven for approximately 20 minutes until golden brown. Remove from the oven and allow to cool.

For the filling, warm the remaining butter, add the condensed milk, stir in the honey, bring to a boil and simmer while stirring regularly for about 50 minutes until everything is golden-brown caramelized. Pour over the cookie base and let it cool. Refrigerate for about 30 minutes.

Chop the couverture chocolate and melt it over a double boiler. Let it cool slightly, pour over the caramel, spread smoothly and allow to set completely for at least 3 hours.
