Chocolate Shortbread

Ingredients

  • 100 g dark chocolate
  • 180 g flour
  • 50 g rice flour
  • 1 pinch salt
  • 3 tbsp cocoa powder
  • 160 g butter
  • 100 g brown sugar
  • flour (for dusting)

Instructions

    Coarsely chop the chocolate.

    Combine the two flours with salt and cocoa. Cream the butter with sugar, sift the flour mixture over it, and gradually fold in until a smooth dough forms. Add the chocolate pieces last and knead into a cohesive ball. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

    Preheat the oven to 180°C (350°F) with top and bottom heat.

    Line a springform pan with parchment paper, roll out the dough on a floured surface to fit the pan, and place it inside.

    Bake in the preheated oven for 10–15 minutes. Remove, cut while warm into pieces, and let cool.
