Shepherd's pie

Ingredients

  • 500 g ground lamb
  • 2 carrots
  • 4 tomatoes
  • 3 shallots
  • 2 tbsp plant oil
  • 150 g medieval Gouda
  • parsley
  • Salt
  • Pepper (freshly ground)
  • 1 packet instant mashed potato mix (ready-made)
  • 1 tbsp butter

Instructions

    Peel the carrots and cut them into small pieces. Parboil the tomatoes in boiling water, peel off the skins, core them, and chop into small pieces. Peel and finely chop the shallots. Heat oil in a pan, sauté the carrots and shallots together for about 2 minutes. Add the ground meat and cook over medium heat for about 5 minutes. Add the tomatoes and continue cooking for another 2 minutes. Season with salt and pepper.

    Prepare the mashed potatoes according to the package instructions.

    Grate the Gouda. Fill greased baking dishes with the meat mixture. Spoon mashed potato on top, smooth the surface, sprinkle cheese over it, and bake in the oven at 220°C for about 20 minutes.
