- 4 stalks leeks
- 2 tart apples
- 1 tbsp butter
- 3 tbsp oil
- 2 tsp Curry powder
- Salt
- Pepper
- Lemon juice
- 150 ml vegetable broth (instant)
- 4 turkey cutlets (150 g each)
- 100 g crème fraîche

Clean, wash and slice the leeks into rings. Rinse the apples, quarter them, core and dice. Heat butter and 1 tbsp oil. Quickly sauté the leeks and apples. Sprinkle curry powder over and stir for a moment. Season with salt and pepper. Add lemon juice and vegetable broth, then simmer for 6-8 minutes.

Season the turkey cutlets with salt and pepper. Heat remaining oil. Fry the cutlets on each side for 3-4 minutes.

Stir crème fraîche into the leek‑apple mixture and bring to a boil once more. Adjust seasoning with salt and pepper again. Plate together with the turkey cutlets.
