Ingredients

  • 2 stalks leeks
  • 4 tbsp pine nuts
  • 3 Garlic cloves
  • 1 tsp lemon zest
  • 0.5 bunch fresh chopped parsley
  • 80 g goat cheese
  • 3 tbsp butter
  • Salt
  • ground pepper

Instructions

    Wash and trim the leeks, then cut into about 6 cm long strips. Toast the pine nuts in a dry pan until fragrant. Peel and finely chop the garlic. Combine lemon zest, garlic, chopped parsley, and crumbled goat cheese in a bowl.

    Sauté the leeks in hot butter, deglaze with a splash of water, season with salt and pepper, cover and steam for about 4 minutes. Then leave uncovered to reduce the liquid almost completely. Arrange the leeks in a warmed bowl and sprinkle with the cheese mixture before serving.
