Ingredients

  • 0.5 l milk
  • 1 Vanilla bean
  • 5 egg yolks
  • 100 g sugar
  • 30 g cornstarch
  • 1 pinch salt
  • 500 ml milk
  • 1.5 EL cornstarch
  • 200 g dark chocolate
  • 50 g sugar (optional)

Instructions

    Slice the vanilla bean lengthwise, scrape out the seeds and stir them into the milk; bring to a boil then remove from heat.

    Beat egg yolks with sugar in a bowl until creamy, whisking in the cornstarch. Slowly pour the warm milk into the yolk mixture, return everything to the pot, remove the vanilla bean, and cook over low flame, stirring until thickened but not boiling. Pour into molds and chill for 2–3 hours.

    For the sauce, finely chop the chocolate. Whisk the cornstarch with a little milk until smooth, then bring the remaining milk to a boil and stir in the cornstarch mixture. Add the chopped chocolate once it boils, stirring until dissolved. Sweeten to taste.

    Serve the chilled pudding on plates topped with the chocolate sauce.
