Ingredients

  • 300 ml milk
  • 1 Vanilla bean
  • 3 egg yolks
  • 75 g sugar
  • 30 g flour
  • Pinch Salt
  • 12 ready‑made biscuit tartlets
  • powdered sugar
  • 600 g strawberries (cleaned and washed)

Instructions

    Slice the vanilla bean lengthwise, scrape out the seeds, and stir the milk with the bean until it boils.

    Beat the egg yolks with the sugar in a bowl until creamy, then fold in the flour.

    Slowly pour the hot but not boiling milk into the yolk mixture while whisking constantly; return everything to the pot, remove the vanilla bean, and simmer over low heat while stirring until thickened. Do not boil!

    Let the vanilla custard cool slightly, spread it over the tartlets, smoothing the surface. Halve the strawberries if desired, place them on top of the tarts, and dust with powdered sugar.
