Semolina Pudding

Ingredients

  • 500 ml whole milk
  • 4 tsp coconut palm sugar
  • a pinch of salt
  • 15 g butter
  • 0.5 Vanilla pod
  • 40 g spelt whole grain semolina
  • cinnamon powder (optional)

Instructions

    Pour the milk into a saucepan and bring to a gentle simmer with 3 tsp coconut palm sugar, salt, and butter.

    Halve the vanilla pod, scrape out the seeds with the back of a knife, and add them to the milk. Just before the milk boils, slowly whisk in the semolina using a whisk.

    Keep stirring constantly until it thickens, about 3–4 minutes. Remove from heat.

    Serve the pudding in four bowls, let it cool slightly, then sprinkle with remaining coconut palm sugar and cinnamon.
