Honey Slices with Fried Strawberries
The honey slices with fried strawberries from Spoonsparrow are always a great dessert!
Ingredients
- 4 eggs
- 120 g honey
- 1 pinch salt
- 100 g spelt whole‑grain flour
- 60 g ground almonds
- 1 tsp Baking powder
- 60 g almond slivers
- 600 g strawberries
- 1 tbsp Raw cane sugar
- 1 tbsp butter
- 2 tbsp lemon juice
- 100 g whipping cream
- 100 g Greek yogurt
- 1 tsp powdered sugar made from raw cane sugar

Line a baking pan with parchment paper. Separate the eggs. Beat yolks with honey and a pinch of salt until creamy. Whisk egg whites to stiff peaks. Sift flour, ground almonds, and baking powder; fold alternately into the honey mixture, adding almond slivers each time. Pour batter into the pan, spread evenly, and bake in a preheated oven at 180 °C (160 °C fan) for 35 minutes or until a toothpick comes out clean.

Meanwhile wash and halve strawberries. Place them in a baking dish, sprinkle with sugar, dot with butter pieces, and drizzle lemon juice over. After 20 minutes of baking, add the strawberry dish to the oven alongside the cake and bake together for another 15 minutes. Remove both from the oven and let cool for 15 minutes.

Whip cream until stiff and fold in yogurt. Dust the cooled cake with powdered sugar and cut into small squares. Spoon a dollop of the cream onto each honey slice and top with fried strawberries.
