Ingredients

  • 0.5 cube fresh yeast (≈21 g)
  • 450 g flour
  • 1 tsp salt
  • 50 g wheat bran
  • 3 tbsp olive oil
  • flour (for working surface)

Instructions

    Dissolve the yeast in 250 ml lukewarm water. Mix the flour with the salt and bran, place in a bowl, create a well in the center, pour in the yeast mixture and oil, and knead into a smooth dough by hand or with an electric hand mixer’s dough hook. Knead vigorously on floured work surface for about 10 minutes, then return to the bowl. If the dough feels too wet, add more flour; if it feels dry, add a little more lukewarm water. Cover and let rise in a warm place for about 1 hour.

    Preheat the oven to 200 °C (Oven + fan).

    Knead the dough again, shape into an elongated loaf, place on a parchment‑lined baking tray, score crosswise with a knife, and let rest another minute.

    Bake in the preheated oven for approximately 30 minutes. Remove, cool, and serve.
