- 400 g Greek yogurt
- 4 tbsp Honey
- 300 g apricots (ripe)
- 3 tbsp walnut kernels
- 50 ml apricot juice
- 2 tbsp walnut brittle

Whisk the yogurt with 2 tablespoons of honey until smooth. Wash and dry the apricots, halve them, remove pits, dice finely, and steam gently in a small pot with 2 tablespoons water until soft. Let cool, then blend with apricot juice and walnuts to make a puree. Layer alternating portions of yogurt and apricot puree, finishing with a top layer of yogurt. Drizzle 1 tablespoon honey over the yogurt and sprinkle with walnut brittle before serving.
